Airborne Contamination in Food Manufacturing: Why Active Air Monitoring Matters

Airborne contamination is a significant but often underestimated risk in food manufacturing. Bacteria, yeasts, and molds can be introduced through personnel, raw materials, packaging, ventilation systems, and production activities. Once airborne microorganisms settle on exposed products or packaging, they can negatively impact food quality, safety, and shelf life.

Fungal contamination is particularly challenging in dairy, meat-processing, ready-to-eat, fruit-processing, and other high-moisture food environments. Mold spores and yeasts can remain suspended in the air and contaminate products even when sanitation programs are well managed. Traditional settle plates provide a simple indication of microbial fallout, but they do not accurately measure airborne contamination. This allows facilities to quantify contamination levels, identify trends, and make data-driven decisions.
